Pamela,
I don’t know about you, but when the political noise gets a little too loud, I find myself gravitating toward the kitchen. Something about slowing down to chop veggies, smelling the wafting flavors mix together, and having a quiet moment over the stove is truly grounding.
For me, cooking has always been a way to reset. After a long day in Congress, making a meal reminds me of why we do this work in the first place — to care for our neighbors and create something beautiful out of that care.
Lately, I’ve been making a new recipe that has quickly become a favorite comfort dish: Roasted Peppers Vegetarian Tamale Pie. It’s warm, hearty, packed with flavor, and perfect for feeding a crowd (or for leftovers after a long day of fighting for our democracy).

I’ll send this recipe straight to your inbox, just click here and add your name.
Whether you’re fueling up before knocking on doors, unwinding after work, or gathering your family around the table – I hope this dish brings you comfort and reminds you that you’re a part of a community that cares deeply about each other.
And if you end up making it, please let me know how this recipe turns out for you! I’d love to hear from you and see your creations.
With gratitude (and a warm piece of tamale pie),
Pramila Jayapal
